Canton’s Alma Cocina Latina has transformed into a carryout arepa bar, while owners Mark Demshak and Irena Stein focus on supporting their back-of-the-house staff. These employees, who often don’t qualify for benefits, are also collaborating with Mera Kitchen Collective, a food-based cooperative empowering refugee and immigrant women.
