In 2002, Irena Stein opened Café Azafrán at the Space Telescope Science Institute in Johns Hopkins. Initially, she envisioned a cozy spot for astrophysicists and astronomers to savor her global cuisine. However, the popularity of her lunchtime specials, especially the stuffed corn sandwiches called arepas, expanded her reach to the entire Baltimore community. Inspired by these scientists, Azafrán later launched Alma in Canton, originally conceived as a straightforward arepa bar. Stein humorously notes that astronomers, typically reserved, became quite enthusiastic about arepas, asking, “When will you open an arepa bar?
